Recipe: "Chinese Style Boiled Chicken"

This method will seem unusual to you, but once you try it, you'll never go back to boiling all the flavor out of those skinless, boneless chicken breasts. You know the type that end up looking and tasting like rubber until you slather all the mayonnaise on it? Try this - it is so easy, and, you'll use the whole chicken, not just the breasts. Use the meat for chicken salad, soups, sandwiches, or, that sinfully great winter comfort food: homemade chicken pot pie!

Directions:
3 lb. stewing hen or fryer
8 qt. stockpot, 2/3 full of water

Boil water, put whole cleaned bird into pot, bring back to boil for 2 minutes. Cover and turn off the heat. Leave everything as is and return in 1 hour. The chicken will be cooked, flavorful, and moist. Remove from water and let cool. Use meat according to your recipes.
