Recipes: Alaska Salmon Bake
With Pecan Crunch Coating.

 

3 Tbsp Dijon-style prepared mustard                                                               ˝ cups chopped pecans
3 Tbsp butter, melted                                                                                           1 Tbsp chopped fresh parsley
1 Tbsp honey                                                                                                        6 (4 ounce each) filets of salmon
˝ cup fresh bread crumbs                                                                                   1 lemon, wedged, for garnish

Directions: 1. Mix together mustard, butter and honey in a small bowl and set aside.

2. Mix together bread crumbs, pecans and parsley in a small bowl and set aside.

3. Season each salmon fillet with salt and pepper to taste.
Place on a lightly greased bake sheet and
brush with mustard-honey mixture.
Pat top of each fillet with bread crumb mixture.

4. Bake in preheated 400 degrees F (205 degrees C) for 10 minutes per inch of thickness – measured at the thickest part, or until salmon flakes when tested with a fork. Serve with lemon wedges.
